The ayurvedic dish par excellence

Kitchari is the Ayurvedic dish that balances the 5 elements, the 3 doshas (vata, pitta and kapha), which does not tire the digestive fire, and which allows to liquifier ama (toxins). Nourishing, digesting easily, and calming the mind.

Ingredients

1 cup dhal lentils (yellow lentils)
1/2 cup basmati rice

Fresh ginger roots grated,
3 c. ghee tea
1 tsp. 1/2 tsp turmeric tea. black pepper tea
1 tsp. tea coriander powder
1 tsp. fennel tea
1 tsp. tea cumin powder
1 tsp. tea black mustard seeds
A pinch of Himalayan salt
1 pinch of hing (asafoetida)
6 cups water or 4 cups of water if you use a rice cooker
1 cup or 1/2 cup vegetables cut into small pieces and steamed: beets, carrots, squash, spinach, celery (avoid vegetables belonging to the solanacefamily: potatoes, tomatoes, eggplant, chillies..)
A handful of fresh coriander to serve

Wash the rice and dal together until the water is clear.
In a frying pan, fry the spices with the ghee for a few minutes, until the spices burst like popcorn.
Cook rice and dal with spices
Steam vegetables
Serve hot, and add a pinch of salt and a bunch of fresh coriander
